CAKE:
1 Duncan Hines Classic yellow cake mix
4 eggs
1/2 cup vegetable oil
3 cups grated carrots (6 or 7 carrots)
1 cup finely chopped nuts
2 tsp ground cinnamon
CREAM CHEESE FROSTING:
1 8oz pkg cream cheese, softened
1/4 cup butter or margarine, softened
2 tsp vanilla extract
4 cups confectioner's sugar
milk or water (if needed)
whole pecans (optional)

Directions:
Directions:
Preheat oven to 350ºF. Grease and flour two 8 or 9-inch baking pans. Combine cake mix, eggs, oil carrots, nuts and cinnamon in large bowl. Beat at low speed until moistened. Beat at medium speed for 2 minutes. Pour into prepared pans. Bake at 350ºF for 35-40 minutes. Cool. FROSTING: Combine cream cheese, butter and vanilla in large bowl. Beat on low speed until smooth and creamy. Add confectioner's sugar gradually beating until smooth. If needed, add more sugar to thicken; milk or water to thin. Fill and frost cooled cake. Garnish with whole pecans.
