1 c. pecans (optional); 2-2/3 c. sugar; 2/3 c. light corn syrup; 2 egg whites; 1/2 c. water; 1 tsp. vanilla extract

Directions:

Chop nuts in blender or nut chopper.

Put corn syrup, water, and sugar in a medium saucepan over medium heat. Stir until sugar is dissolved. Bring to a boil and cook over moderate heat, without stirring, until mixture reaches 260ºF on candy thermometer, or until a small amount of the mixture forms a hard ball in ice cold water. In large mixer bowl beat egg whites at high speed until stiff peaks form. Continue to beat while slowly pouring hot syrup in a thin stream into egg whites. Add vanilla and continue to beat until mixture forms very stiff peaks and loses its gloss. Quickly fold in chopped nuts. Drop mixture by rounded teaspoon on wax paper. Cool.

IMPORTANT: If your mixer starts to smell "hot", turn off immediately and finish stirring by hand so you don't burn up your mixer like I did once. lol

Divinity is also known by some people as Angel Poop! Hope you enjoy this light fluffy candy. It has always been a favorite of your great grandma Webster's and of your Aunt Juanita's.
