3/4 c. sugar; 1 c. shortening; 1 beaten egg; 1 t. vanilla; 1/2 tsp. lemon extract; 1 c. mashed (or baby food) carrots; 2 c. flour; 2 tsp. baking powder; 1/2 tsp. salt.

Cream shortening and sugar. Add remaining ingredients in the order given. Drop by tsp. on greased cookie sheet and baker in 350º oven.

Ice cookies while still warm with powdered sugar, orange juice, grated orange rind (optional); and butter with a little lemon extract. Be sure to add liquid slowly so as not to get too thin.
