Marinated Chicken:
3 tsp brown sugar 6 tbsp canola oil
2 tsp salt 1 tsp soy sauce
4 cloves garlic, minced 1 lb boneles, skinless
4 tsp dry sherry (Marsala works) chicken cut into
2 tsp cornstarch appr. 1" squares

1 12oz pkg won ton wrappers (We seem to use 4 -5 pkgs
2 cups peanut oil

Dipping sauce:
12 oz apricot preserves
4 tsp mustard
4 tbsp terriyaki sauce
If no time can use duck sauce in a pinch

Directions:

Mix marinade ingredients in a container with a cover and mix in chicken. Cover and refrigerate overnight.

Place one piece of chicken in middle of won ton and dab a bit of marinade on each corner. Fold like an envelope. If run out of marinade can use oil.

Heat peanut and cook single layers of won tons until slightly brown on both sides. Transfer to rack.

Mix sauce together and serve with warm won tons

Made this recipe from Kosher by Design cookbook one sukkot. Everyone loved it. When Uncle Jason retired, he decided to oversee the kitchen and took it upon himself to be the official won ton maker. Now I cut the chicken and marinate it while he fills the won tons and fries them.
