Goat Cheese
• 4 ounces plain fresh goat cheese
• ½ teaspoon cracked pepper
• 2 tablespoons grated red onion
• salt (optional)

Avocado and Tomatoes
• 2 small avocados, diced
• juice of ¼ lemon
• hot pepper sauce to taste
• 1 pound very ripe Roma tomatoes, peeled, seeded and chopped
• 2 tablespoons each chopped fresh oregano, chopped fresh Italian (flat leaf) parsley
• salt and freshly ground pepper

• 1 bag of Tostitos Scoops

Directions:
Directions:
Grate the red onion and fold into the goat cheese along with the pepper. Set aside.

Combine the avocados, tomatoes, lemon juice, hot sauce, herbs and salt and pepper and toss together.

Put a small amount of the goat cheese mixture in the bottom of each scoop. Top the scoop off with some of the avocdo and tomato mixture and enjoy.

To make it easier to get the cheese in the scoops, I put the mixture in a ziploc baggie, cut off a small piece of one corner and use it to pipe the cheese in.
