CAKE:
2 large or 3 small eggs
1 cup salad oil
2 cups sugar
1/2 tsp vanilla
2 cups sifted cake flour
1 tsp soda
1/2 tsp salt (if self-rising flour is used omit salt & soda)
2 tsp cinnamon
4 cups thinly sliced apples
1/2 cup nuts
FROSTING:
2-3 oz cream cheese
3 tbsp softened butter or margarine
1 tsp vanilla
1 1/2 cups powdered sugar

CAKE: Beat until foamy 2 large or 3 small eggs. Mix beaten eggs. 1 cup salad oil, 2 cups sugar, 1/2 tsp vanilla, 2 cups sifted cake flour, 1 tsp soda 1/2 tsp salt, 2 tsp cinnamon. Add 4 cups thinly sliced apples and 1/2 cup of nuts. Batter will be very thick. Bake at 350º for 40 minutes - check with toothpick.
FROSTING: Mix all ingredients well and spread on cooled cake
