Bean & Ham Soup Recipe

1 1/2 c. dry bean soup mix (i.e. 7 bean, 10 bean, etc.) 1 ham hock
1 medium onion, diced
2 c. celery, diced
2 c. carrots, diced
5 T. Boyd's Ham Base
1/2 tsp. black pepper

Directions:
Directions:
Soak beans in 4 cups of water overnight in the refrigerator. Drain the water. Simmer beans in fresh water (enough to cover) until tender. Meanwhile, cook the ham hock in 2 quarts of water until the meat falls from the bone. Drain and strain the meat, reserving the broth. Dice the meat. Combine reserved broth to the beans (add water, if necessary, to make 2 quarts) adding in the vegetables and ham base. Cook until the vegetables are tender, add in the diced meat, heat through, and serve.

We love this recipe, especially on a cold day! Works great if you ever receive dry bean soup mixes and not sure what to do with them, or with your favorite dry bean soup mix.
