2 cups vanilla soy milk or other nondairy milk of choice
1/4 cup whole-wheat flour
2 tablespoons nutritional yeast flakes
2 tablespoons maple syrup
2 teaspoons pure vanilla extract
2 teaspoons ground cinnamon
1/2 teaspoon freshly grated nutmeg
8 slices whole-grain bread of choice

Directions:
Directions:
In a large, shallow dish, place soy milk, flour, nutritional yeast flakes, maple syrup, vanilla extract, cinnamon, and nutmeg, and whisk well to combine.

Place 4 bread slices into soy milk mixture, flip slices over to coat other side, and leave them to soak for 2 minutes.

Lightly oil a large nonstick skillet and place over medium heat (or use a griddle).

Using a fork, carefully remove bread slices from soy milk mixture and place them into the hot skillet.

Cook bread slices for 1 or 2 minutes or until golden brown on the bottom. Flip bread over with a spatula and cook for 1 or 2 more minutes or until golden brown.

While cooking first batch, repeat soaking procedure for remaining 4 slices of bread. Lightly oil the skillet again and repeat procedure for remaining bread slices. Serve hot with maple syrup, jam, or other toppings of choice. Give your French toast a light dusting of vegan powdered sugar before serving for an extra-special touch.

We love this recipe; however, I usually substitute Pumpkin Pie Spice for the nutmeg.
During the holidays, we use Silk Brand Pumpkin Spice Soy Milk or Eggnog Soy Milk in place of the vanilla soy milk for an extra special treat.
