Buttermilk
Bacon drippings

1. Preheat oven to 500º.

2. Sift a large bowl full of the flour; drop a dollop of shortening on top of the flour (about egg-sized), then add a good amount of buttermilk slowly.

3. Work it in very gently and keep adding buttermilk until you get a soft dough.

3. Heavily grease a cookie sheet. Pinch off sections of dough equal in size, and shape gently with hands. Set apart on the cookie sheet.

4. Put a little bit of bacon grease on top of each, then bake in preheated oven until golden brown. Serve hot from the oven.

These are undoubtedly the very best biscuits on the planet, and she could whip these out with her eyes closed. I always watched her make these when she came to visit, and she made them just about every morning. No measurements, but that's how she cooked everything, and it was always delicious.
