"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
2 Cups Flour
2 Cups Granulated Sugar
6 Whole Eggs
1 Cup Butter, softened
1-3/4 Teaspoons Baking Powder
1 Tablespoon Vanilla

Directions:
Directions:
Preheat oven to 350º. Cream sugar and butter in large mixing bowl. Add all remaining ingredients and beat on medium speed for 12 minutes. *Beating for 12 minutes is important in order to get the "crunch" on the top of the cake. This is where a stand mixer comes in handy! Spray a 10" tube pan with non-stick spray and spread cake batter into prepared pan. Bake in oven for approximately 50 minutes or until a toothpick inserted into cake comes out clean. Cool on wire rack. Dust top of cake with powdered sugar.

This was a staple cake when I was growing up. It is a delicious cake and easy to make. It was my Dad's favorite cake. It is excellent served with ice cream and fresh berries or caramel sauce.
