9 inch single crust pie shell
1/4 tsp. baking power
1/2 c milk
1/2 tsb grated orange rind
1 tsp brandy
3 med. size sweet potatoes
1/4 c room tempture butter
2 eggs separate
1/2 c honey
1/4 tsp salt.

Directions:
Place oven rach 4 to 5 inches from bottom of the over. Preheat oven to 450º Scrub sweet potatoes in cold water, put in 3 qt. saucepan cover and cook until they become soft. Skin potatoes while warm and run through food processor, or mash with mixer. Beat in butte, egg yoke, add nutmeg, baking power, milk, and orange rein, Beat slowly until well mixed. Add brandy, salt, and honey
Pour in to pie shell and bake at 450º, for 15 minuets, and reduce heat to 300º for 25 to 30 minuets. Cool 3 to 4 hours.

you can also use the two egg whites to make a meringue. Beat egg whites with 3 T. sugar and a 1/2 tsp. cream of tarter. Spread meringues over the entire pie, making sure to touch the crust with the meringue Return to oven for 10 minuets.
