5 lbs. self-rising flour
1 can of evaporated milk
1 cup buttermilk
1 T sugar
3-4 C tepid water
1/2 gal Peanut Oil

Heat oil to 450º
1. Mix flour & sugar in a large pan, reserving 1 1/2 cups for kneading.
2. Make a large well in center of flour.
3. Empty milks and 3 cups water into the well.
4. Begin mixing by adding flour to the liquid going in circles around the well. Being careful to pick up
flour from bottom of pan to incorporate. When all of flour is incorporated into liquids dough should be soft and easily handled. Knead the dough until it springs back (should be soft as baby skin:)
5. Cover and let dough set for 2-3 hour or overnight.
6. 45 minutes before cooking, heat oil in pan with at lease 4 inches of oil. Oil is hot enough when a small pinch on dough dropped into the oil rises immediately to the top.
7. Break off balls of dough the size of a small orange. Roll out on floured board to size of an 8" dinner plate. Punch hole in the middle with finger.
8. Drop disc into hot oil gently so that the part being held in the hand is pushed away from you.
This is to prevent the hot oil from splashing on you.
9. Bread should brown quickly, watch the hole in the middle as it browns. Turn and finish browning.
10 Drain on paper towels.
