¼ cup olive oil
2 large garlic gloves, minced
2 cups low salt chicken broth
½ cup dry white wine
2-10 once packages of fresh spinach leaves
1 large onion, chopped
1-1/4 cups long grain white rice
1 cup chopped seedless tomatoes
1 cup crumbled Feta

Directions:
Directions:
Heat oil in large pot over med-high heat. Add onion and garlic. Sauté until onion is tender. Add rice and stir until rice is translucent, 2 mins. Add broth and wine. Boil. Reduce heat to low & cover for 15 mins. Mix in spinach. When liquid is all absorbed, mix in cheese and tomatoes.
