6 pork loin or rib chops, about 1-in thick
1 cup dry Marsala wine
1 Tbsp Balsamic vinegar
1 Tbsp fresh lemon juice
1 tsp. honey
2 Tbsp olive oil
1 Tbsp chopped fresh thyme leaves
1 Tbsp chopped freash parsley
1/2 tsp. salt
1/2 tsp. pepper
1 cup kalamata olives, pitted
1 med red onion, chopped
2 cloves garlic, finely chopped

Directions:

1. Place pork in shallow glass dish.
2. Mix wine, vinegar, lemon juice, and honey; pour over pork. Turn pork to coat both sides. Cover and refridgerate at least 8 hrs, turning occasionally.
3. heat oil in skillet over med-high heat. Cook remaining ingredients in oil about 5 min, stirring frequently, until onion is tender.
4. Remove pork from marinade; reserve marinade.
5. Add pork to skillet. Cook about 10 min, turning pork once, until pork is brown.
6. Add reserved marinade. Heat to boiling; reduce heat. Cover and simmer about 20 min or until pork is slightly pink when cut near the bone.
7. Servepork with pan sauce.
