Cream of Broccoli Soup Recipe

4 tbsp. melted butter
2 shallots or scallions chopped
3 tbsp. flour
1/2 c. milk
1 c. cream
5 c. chicken stock
5 c. broccoli finely chopped and cooked
salt and pepper
chopped parsley

Melt butter in soup kettle. Add shallots and saute until soft. Sprinkle in the flour and stir until well blended. Slowly add the milk and cream and stir until smooth. Add chicken stock and broccoli.
Simmer 10 minutes, uncovered. DO NOT BOIL!
Season with salt and pepper and garnish with parsley.
