3 eggs beaten
2/3 cup flour
1/2 tsp salt
1 cup milk

Filling:
8 slices bacon
1/2 chopped green pepper
1 can sliced mushrooms drained (or use fresh)
2 cups grated cheddar cheese
1-8 oz tomato sauce

Directions:
Directions:
Mix the batter and let stand for 30 minutes. Make each crepe with 1/4 cup of batter. Cook on one side only. Fry the bacon until crisp and reserve 2 tbs of the fat. crumble the bacon. Cook onions and mushrooms in the bacon fat. Add 11/2 cups cheese and mix lightly. Fill each crepe with 1/4 cup cheese mixture, roll, and place in a baking dish and top with tomato sauce. Bake at 350 for 15 minutes. Sprinkle with remaining cheese and continue baking until the cheese melts.

This is an excellent recipe. I first made it in 1967. All four of my children would ask for it on Sunday mornings.
