1 lb. jumbo lump cab meat
1 oz. each: fresh white bread crumbs& chopped parsley
Crab cake mayonnaise:
1 c. mayonnaise
1 egg
1 tsp. Old Bay seasoning
1 oz. lemon juice
Tomato vinaigrette:
4 vine ripe tomatoes, peeled, seeded & chopped
1 oz.each: freshly chopped basil, oregano & parsley
2 oz. chopped garlic
4 oz. chopped shallots
16 oz. olive oil
5 oz. lemon juice
salt/pepper to taste
shredded lettuce for garnish

Blend mayonnaise, egg, seasoning and lemon juice. Whisk tomato vinaigrette ingredients. Combine crabmeat, crab cake mayonnaise, bread crumbs and parsley, mixing well but being careful not to break the crab pieces too small. Scoop crab mixture onto a sprayed cookie sheet and bake at 350º for 20 minutes. To serve, place a bed of shredded lettuce on plate and garnish with tomato vinaigrette.
