Ingredients: 2 ¼ cups pitted dates, cut up 1 cup granulated sugar 1 cup water 1 cup chopped nuts 1 cup shortening (butter or margarine) 2 cups brown sugar, firmly packed 3 eggs, well beaten 4 cups sifted all-purpose flour ½ t salt ½ t baking soda **I use 1.5 times dates, sugar and water for enough to spread

Directions:Combine the dates, granulated sugar, and water in a saucepan and cook over low heat until thick –about 10 minutes. Add the nuts and cool. Meanwhile, work the shortening with a spoon until fluffy and creamy; add the brown sugar gradually while continuing to work with a spoon until light. Add the well-beaten eggs and mix well. Add the remaining ingredients sifted together and mix well. Cover and chill thoroughly. Divide the mixture into two parts and roll each out separately into a rectangle a little less than ¼ inch thick. Spread each with some of the date filling and roll up as for a jelly roll into two long rolls. Wrap in waxed paper and chill thoroughly – overnight if you can- in refrigerator. Then cut with a sharp knife into slices about ¼ inch thick. Arrange on a greased or oiled cookie sheet. Bake in a moderately hot oven of 400 degrees for 7-8 minutes. Makes about 6-7 dozen cookies. |
