2 cups mashed potato (I use garlic instant serves 4)
1 lb ground lean beef
1 small onion minced
2 cloves garlic minced
1 Tbl chopped parsley for meat and 1 tsp for potato
1 cup Italian flavored bread crumbs plus 4 Tbl
1 tsp worcestershire sauce (optional)
2 eggs
½ cup grated Parmesan cheese
½ cup water
½ lb of mozzarella cheese. ( I use slices)
Salt and pepper to taste
4 Tbl olive oil (split)

Directions:

Blend 1 tsp of parsley with mashed potato. Let potato cool a little before stuffing.
Mix ground lean beef, breadcrumbs, water, grated cheese, eggs, onion, Worcestershire sauce, minced onion, minced garlic, salt & pepper thoroughly.
Brush a deep 10 in pyrex baking dish with 1 Tbl of olive oil. Sprinkle lightly with 2 Tbl of bread crumbs.
Take half of meat mixture and try to flatten out in your hand then place mixture in dish, alternate a layer of mash potato and a layer of sliced mozzarella cheese. Take remainder of meat mixture, flatten out and place on top of potato and cheese.
Close edges firmly so potato and cheese do not show and hopefully don’t ooze out.
Brush with remaining olive oil. Sprinkle another Tbl of bread crumbs on top.
Bake for 25-30 minutes at 350 degrees until meat is golden brown and not dry. Turn over on hot platter, slice and serve.
(I broil the last five minutes on high to brown top and create crust and slice in casserole.You can double recipe, but not use all the mash potato inside. Keep remaining as side dish.)
