1 pkg. wide egg noodles or spaghetti
2 1/2 - 3 lbs chicken pieces (You can use what you like - I prefer all boneless, skinless chicken breasts)
1/2 cup good olive oil
2-3 large onions cut in 1/4" slices
3-4 cloves garlic minced
1 large can Italian crushed tomatoes
1 small can tomato paste
1 15 oz. can tomato sauce
1 1/2 cup red wine (Optional)
1/4 tsp. pepper
1/2 tsp. celery seed
1 tsp. salt
1 tsp. each sweet basil leaves and oregano leaves
2 bay leaves
1/2 cup freshly grated Parmesan cheese
finely shredded or torn fresh basil leaves for garnish

Heat Oil in large Dutch oven. Sprinkle Chicken with salt and pepper. Brown chicken in pot on both sides and remove from pot. To oil in pan add onions and cook until soft and starting to turn light brown, add garlic, and stir cook for 2 minutes.Add wine to deglaze pan and all other ingredients. Bring to a boil and stir to combine all ingredients. Add chicken and any juice accumulated back to pan. Cover and Simmer for 1-2 hours.
In the meantime cook spaghetti or noodles as directed on package.
Serve chicken over pasta with a generous scoop of sauce and onions and garnish with cheese and fresh basil
