"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
Navy Beans (1 or 2 lbs)
Ham Hocks
1 inch ham cubes
Corn Bread mix of your choice

Directions:
Directions:
Soak beans in water over night.
Drain water and cover again with water and 2 tbsp baking soda.
Bring this just to a boil and drain the water off.
Two more times cover with water and 2 tbsp baking soda and bring to a boil.
After you repeat this process three times you will drain the water and rinse completely with cold water.
Cover the beans with water and put ham hocks in. Heat and simmer for about an hour. Add your ham cubes, salt and pepper to taste and cook them until they are the consistency you want. You may want to add onion, but we don't care for that. You can also add ham bullion for stronger flavor.

Personal Notes:
Personal Notes:
This was the way Mom Grise fixed them. Every New Years day she had the family in for ham and beans which was supposed to bring everyone a good and prosperous new year!
