2 eggs -- beaten
7 oz packet or can of crabmeat -- drained
2 tsp lime juice
1 Tbsp + lime zest
3/4 c coconut milk
1 Tbsp chives (vary flavor with chili-flakes, lemongrass or ginger)
salt and pepper
1 pkg puff pastry (10" square sheets)

Butter or spray two mini muffin pans.

Combine all the ingredients except puff pastry, in a bowl & mix.

Cut out little rounds of puff pastry (small wine glasses work good to cut circle with) that will cover the bottom of the mini muffin cups. They do not need to go all the way up the edge of the cups, just make sure the bottom is covered.

Spoon 1 Tbsp. of filling over the puff pastry.

Bake 20 minutes at 400*

These can be made ahead and frozen. Reheat for a couple minutes in hot oven and serve.
