Incredibly Easy Chocolate Mousse Recipe

Ingredients: I cup (6 oz. package) semisweet chocolate chips 1/3 cup of VERY hot coffee OR 1 teaspoon instant coffee granules dissolved in 1/3 boiling water. 4 large eggs 2 tablespoons vanilla extract, Creme de Cacao, Kahlua or Grand Marnier Whipped Cream

Directions:Put the chocolate chips in the blender and pour the hot coffee over them. Cover and blend on high speed for about 15 seconds, or until the mixture is smooth. Scrape down the sides with a rubber spatula and blend again for a few seconds.
Separate the eggs, putting the egg whites into a large metal or ceramic bowl with no traces of grease and the egg yolks into the chocolate mixture. Set the whites aside. Add the vanilla or liqueur to the chocolate mixture. Cover and blend on high speed for about 15 seconds or until mixture is smooth.
Beat the egg whites with an electric mixer just until they form stiff peaks. Do not overbeat.
Pour the chocolate mixture over the beaten egg whites and mix them gently with a rubber spatula, scooping up the egg white from the bottom of the bowl and turning the spatula over repeatedly until no white is showing. Pour the mousse evenly among 6 small dishes or into a serving bowl. Cover with plastic wrap and refrigerate for at least one hour or overnight. Serve plain or with whipped cream. |
