Prepare Cornbread
2 packages cornbread mix (I prefer stone ground)
2 eggs
1 1/3 cups milk
1 tsp sage
1/2 tsp poultry seasoning
1/2 tsp salt
1/2 tsp black or white pepper
1/8 tsp thyme, if desired
Chicken Broth (from boiled hen or can)

Directions:
Directions:
Bake cornbread mix in prepared pan according to package directions. I use a iron skillet that has been greased and heated then sprinkle cornmeal over the bottom before adding the cornbread mix and baking.
Break (cooled) cornbread into pieces in large bowl.. Add spices and enough broth to moisten well. (make a little soupy for dressing) Bake in 9x13 inch buttered dish and cover with foil for about 35-50 minutes for dressing,
To use as stuffing for Cornish hens or other poultry use less broth and place directly into cavity of bird to bake.

Personal Notes:
May add cooked chicken to mixture before baking for chicken and dressing. To make "grown up" dressing add sauteed onions, celery and hard boiled eggs before baking.
instead of cornbread mix-may use your own homemade cornbread recipe.
