1/2 chilli, seeded and roughly chopped
1 garlic clove - roughly chopped
1 tbsp fresh coriander - roughly chopped
1 lime
2 ripe advocados
1 ripe tomato - seeded and roughly chopped
1 tbsp white onion - roughly chopped
pinch salt

Directions:
Directions:
Put chilli, garlic, coriander and about 2 teaspoons of lime juice in a blender and process to a semi-puree. Add the flesh of one of the avocados and process until smooth.
In a bowl, mash the second avocado with a fork, adding a good squeeze of lime huice. Leave this second avocado a bit lumpy to give a nice texture.
Transfer the puree mixture into the bowl and combine. Finally, add the chopped tomato and the white onion
Taste for salt and extra lime juice and add if necessary, mixing well.
