1 package Buitoni pasta (tortellini, ravioli, or other pasta varieties)
3 tablespoons olive oil
1 pound chicken breast or thighs cut into 1-inch pieces
2 cloves garlic, finely chopped
1/4 cup low-sodium chicken broth
10 ounce fresh spinach, stems trimmed, chopped
1 cup button mushrooms, sliced
1/8 teaspoon crushed red pepper, optional
1/2 cup grated Parmesan
salt and pepper

Directions:
In a large pot of salted, boiling water cook pasta according to package directions. Drain. Warm 2 tablespoons olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper. Saute' chicken until golden brown and cooked through, about 3 minutes. Transfer chicken to a plate; cover with foil to keep warm. Warm remaining 1 tablespoon olive oil in same skillet. Saute' garlic for 1 minute, until fragrant. Pour in broth and cook for 1 minute, stirring to scrape up any browned bits from the bottom of the skillet. Add spinach, mushrooms, and crushed red pepper, if desired, and cook, stirring until spinach has wilted and mushrooms are golden, about 7 minutes. Add reserved chicken and pasta to skillet; stir to combine ingredients. Top with Parmesan and serve.
