1/2 c. uncooked rice
2 c.hot water
1/2 c. tomatoes
3/4 tsp. salt
1/4 c. onion, finely sliced
1/4 c. green pepper, sliced
2 T. melted butter
3/4 tsp. curry powder (can add more)

Directions:
Directions:
Wash and drain rice then pour into hot water. Let stand for 45 mins. (keeping hot but not cooking).
Add all the remaining ingreds. Blend well. Place
mixture in a baking dish and bake in a moderate oven until rice is cooked. Stir from time to time so that the rice will spread evenly through the mixture.
