eggs:
9 eggs room temp
1/2 c flour
1 cup panko crumbs
1 tsp kosher salt
2 tbsp sriracha sauce
mayo as needed

Sriracha remoulade:
1/2 c mayo
2 1/2 tbsp rw vinegar
1 ntbsp dijon mustard
1 1/2 tsp fresh chives, chopped
1 1/2 tsp fresh flat leaf parsley chopped
1 1/2 tsp capers
Arugula

mix all ing together

eggs: simmer 6 eggs for 3 minutes, softboiled. drain, cover with cold water and peel immediately.
roll eggs in flour, the beaten remaining 3 eggs, then spiced breadcrumbs. fry eggs on both sides, keep in oven on 200 until ready to serve.
Serve; pile arugula on plate, put egg on top and remoulade on the side
