1 c cake meal/2 c flour
1 c oil
4 eggs
5 large carrots, shredded
2 tsp baking powder
1 tsp baking soda
1 tsp vanilla

mix all. scoop into greased muffin tins, sprinkle with cin/sugar
bake 350 20 mins, do not overbake.
