2 eggs
Beat until frothy.

2 cups sugar
1 cup pumpkin
1/2 cup oil
Add. Beat until well blended.

1 Tbsp pumpkin pie spice*
1 tsp baking soda
1/2 tsp salt
Blend in.

2 1/4 cups flour
Stir in just until moist.

1 cup cranberries (coarsely chopped if desired) I've hydrated Craisins in cranberry or grape juice as well.
Fold in.

Pour into well greased/floured bundt pan. (or a 9x13 so you don't have to worry with getting it out)
Bake at 350 for ~50 minutes until toothpick comes out clean.
Cool in pan ~10 minutes. Run knife around edge. (I have at times found it difficult to get out of pan.)

*If you don't have Pumpkin Pie Spice, you can substitute this for 1 Tbsp Pumpkin Pie Spice:
1 1/2 tsp cinnamon
3/4 tsp ginger
3/8 tsp allspice
3/8 tsp nutmeg
