1 lb stew meat, cut into 1” pieces
1 can beef broth
2 medium sweet potatoes, peeled and cut into 2” pieces (can substitute white potatoes or carrots)
1 large onion, cut into 1” pieces
2 slices thick cut bacon, diced
1 tsp dried thyme
1 tsp salt
¼ tsp pepper
2 Tbsp cornstarch
2 Tbsp water

Coat slow cooker with Pam. Add beef, broth, potatoes, onion, bacon, thyme, salt, pepper; stir to mix well. Cover and cook on low 7-8 hours or on high 4-5 hours. Remove meat and vegetables with a slotted spoon and keep warm.

Turn slow cooker to high. Combine starch and water in small bowl until smooth. Stir into juices in slow cooker. Cook, uncovered, 15 minutes or until thick, stirring occasionally. Stir back in the meat and vegetables. Cover and cook 15 more minutes or until heated through.
