1 c. softened butter
1/3 c. whipping cream
2 1/2 c. flour (sifted)
Granulated sugar to turn cookies in

FILLING
1/4 c. butter
1 c. powdered sugar
1 egg yolk
1 tsp. vanilla

Directions:
Directions:
Cream butter until light and fluffy. Stir in cream gently - DO NOT BEAT. Gradually stir in flour. Chill over night. Roll on lightly floured board to 1/8". Cut with a small cutter. Dip each side in granulated sugar. Prick with a fork. Bake until light brown - 7 - 9 minutes at 375º.

Filling: Combine and beat at high speed till fluffy. Spread on one cookie, and place another cookie on top (like a sandwich). Refrigerate.
