2 c. cottage cheese
1/2 c. melted butter
1/2 c. flour
1 lb. monterey jack cheese, shredded
10 large eggs
1 tsp. baking powder
8 oz. can chopped green pepper and/or pimentos (optional)

Directions:
Directions:
Mix all ingredients together and pour into a 9x13 pan. Bake at 350ºF for 50-60 minutes. Serve with salsa on the side.
