1 1/2 lb. lean ground beef
1 large onion, chopped
1 large bell pepper, chopped
2 large cloves garlic, finely chopped
1 can crushed tomatoes, undrained
2 cups hot water
1 pkg. onion soup mix
1 tsp. Italian seasoning
3 c. uncooked rotini or fusilli pasta
1 1/2 c. shredded mozzarella cheese

Spray 9x13 glass baking dish with cooking spray. Cook beef, onion, pepper, and garlic in a 4-quart Dutch oven for 5-7 minutes until beef is thoroughly cooked; drain. Stir in tomatoes, water, soup mix, Italian seasoning, and pasta. Spoon into baking dish. Cover with foil; refrigerate at least 8 hours but no more than 24. Heat oven to 375ºF. Bake covered for 45 minutes. Sprinkle with cheese and bake uncovered for 10 minutes until cheese is melted and casserole is bubbly.
