2 quarts swiss chard stalks ( the white part only)
2 quarts onion
1 quart celery
1 sweet red bell pepper




Directions:
Directions:
Chop vegetables finely. Sprinkle with salt and leave for 2 hours or more. Drain well., and add enough blended vinegar or all 5 % white vinegar to cover the vegetables.

Combine the following with cold vinegar to make a paste. I used about ½ cup vinegar.

4 cups white sugar
½ cup cornstarch
2 tablespoons dry musrard
1 tablespoon tumeric
1 tablespoon curry powder (optional) i did not use it.

Add to the vegetables, bring to a boil. Cook for 10 minutes. Seal in hot , sterilized jars makes 8 pints

Blended vinegar is equal parts white vinegar and cider vinegar. Very Good.
