16 oz. box thin spaghetti
1 large sweet onion, (Vidalia or candy onion)
1 large cucumber, peeled
1 red and 1 yellow bell pepper
3 stalks celery
1 large tomato (optional)
1 pkg. Good Seasons Italian dressing mix
1 24 oz. bottle Zesty Italian salad dressing
kosher salt, to taste

Cook spaghetti al dente,adding kosher salt to boiling water, then rinse in cold water and drain well. Toss spaghetti with 1/2 cup of Italian dressing and package of Good Seasons Italian mix. Chop sweet onion, cucumber, bell peppers, celery and tomato.Toss seasoned spaghetti, chopped vegetables and remainder of Zesty Italian dressing in a large glass serving bowl, cover and refrigerate for several hours. Serve chilled.

We think this salad is more flavorful if made a day in advance of serving. Keeps well in the refrigerator for up to a week. Perfect to make in summertime, when fresh garden vegetables are available.
