Salad Greens
1/2 cups chickpeas
4 oz. grilled chicken
3 Tbsp. toasted walnuts or pecans

Dressing
4 passion fruits (pulp removed and strained) 1/4 cup juice
2 Tbsp orange juice
1 lime juiced
2 tsp honey
1 tsp dijon mustard
1 Tbsp fresh ginger, grated
1 cup vegetable oil

Directions:
Directions:
Dressing: In a large bowl or food processor mix all the ingredients EXCEPT the oil. Add the oil in a thin stream, whisking or processing constantly. This is a workout for the arm, but very important if you want the oil to emulsify and not separate out later from your vinaigrette. Strain to remove any leftover passion fruit seeds or ginger clumps.

Mix Greens, chickpeas, nuts and chicken and mix with 3 Tbsp dressing
