1-1/4 cups wine vinegar
1 cup water
2 jalapeño peppers, chopped
1 clove garlic, halved or minced
1 tsp. oregano
2 tsp. salt
1/2 tsp. pepper
3 lb. boneless sirloin, cut into 1" cubes

Purée the first 7 ingredients in a food processor or blender. Marinate beef cubes in the mixture in a plastic bag in the refrigerator overnight. Remove from marinade and place several pieces on a wet skewer. (Be absolutely certain to soak skewers for about 30 minutes before grilling to prevent burning.) Grill on barbecue pit until meat reaches desired doneness, basting frequently.
