2 lbs. of beef roast, cut in 6 pieces
1 (14 1/2 -oz) can diced tomatoes, undrained
1 med. onion, chopped
1-2 cloves of garlic, minced
1 to 2 cans of chipotle peppers in adobo sauce, chopped
1 tsp. dried oregano, crushed
1/4 tsp. ground cumin

10-12 corn tortillas fried on an oiled skillet
shredded cheddar cheese
sour cream
Pico de Gallo

Place first seven ingredients in slow cooker. Cook on low for 8-10 hours or high for 6-8 hours. Once cooked, take and create tacos with cheese, sour cream, guacamole, and Pico de Gallo.
