3 eggs
1 c. sugar
2/3 c. pumpkin
1 t. lemon juice
*beat 1st 4 ingredients on high 5 minutes*
3/4 c. flour
1 t. baking powder
1/2 t. salt
2 t. cinnamon
1 t. ginger
1/2 t. nutmeg
1 c. chopped pecans

Filling:
1 c. powdered sugar
3 oz. cream cheese
1/4 c. butter
1/2 t. vanilla
1/2 c. whipped dessert topping

Directions:
Grease and flower your jelly roll pan. Sprinkle with chopped nuts. Pour on mixture and bake at 375º for 15 minutes. Open a dish towel and sprinkle with powdered sugar. Dump your cake on the towel and roll up until completely cool.

Mix together the filling ingredients until smooth. Unroll your pumpkin cake and smooth the filling over the top. Roll it back up and sprinkle with powdered sugar, then chill.
