4 c. fresh strawberries
5 c. sugar
3 Tbsp. lemon juice or 1/2 tsp. cream of tartar

Directions:
Place in wide kettle, alternate layers of sugar and berries. Bring slowly to boil. After the whole mass is boiling, cook 9 minutes. Remove from heat, add the lemon juice or cream of tartar. Let stand overnight. The second day, boil 9 minutes. Allow to cool and place in glasses. Seal with paraffin or wax. Cooked this way, the preserves are beautiful and tender jelly surrounds the plump bright red berries.
