1/4 c. sugar, honey, or agave
1/2 t. spices like cinnamon, nutmeg, or cardamom
3-4 c. fruit (about 1 1/2 lb.) pitted, sliced or halved
peaches, nectarines, plums, apricots, pears, apples, pineapples, mangoes, strawberries, bananas.
1 t vanilla
1/4 c. OJ
1 T. butter

Directions:
Directions:
Preheat oven to 400º
Whisk together sugar and spices.

In another bowl, toss fruit with vanilla and oj.
Arrange fruit with juice on top, sprinkle with sugar and spices.
Roast for at least 20 min, or until fork tender
Serve it over vanilla ice cream or with whipped cream or creme fraiche.

Variations:
Peaches served with buttermilk biscuits and whipped cream

Nectarines with creme fraiche sweetened with honey and vanilla.

4 Anjou or Bosc pears with 3/4 c. cranberries. Use brown sugar. After roasting for part of the time top with walnuts to finish.
