1 can black-eyed peas, drained & rinsed
1 can pinto beans, drained & rinsed
1 can black beans, drained & rinsed
1 can mexicorn, drained
1 jar pimientos, chopped
1 c. celery, chopped
1 tsp. salt
3/4 c. cider vinegar
1/2 tsp. pepper
1/2 c. oil
1 Tbsp. water
1 c. sugar

Directions:
Directions:
Mix the first six ingredients in a large bowl. Put the remaining ingredients in a small saucepan, bring to a boil, and pour over the ingredients in the bowl. Marinate overnight, drain before serving. Serve with chips.

Personal Notes:
Cutting back too much on the sugar will significantly alter the taste. I like to serve this with either the scoops style tortilla chips or the hint o' lime tortilla chips.

As a substitute for Mexicorn, you can use 1 can white shoepeg corn (or 2 color), drained, and 1 c. green bell pepper, chopped.
