3 c. cooked zucchini
2 eggs
1 c. milk
1/4 stick margarine
chopped onion to your taste
1 c. cubed white American cheese
2 c. crackers broken into small pieces
3/4 tsp. salt
1/4 tsp. pepper

Directions:
Directions:
Cut zucchini down the middle into quarters and then into pieces about 1/4 inch thick. Boil slightly in water with 1/4 tsp. salt. Drain well. Beat eggs. Add milk, melted margarine, chopped onion, salt and pepper. In a greased casserole, place a layer of zucchini, crackers and cheese, then another layer of each until all is used ending with a layer of cheese. Pour over the milk and egg mixture. Bake at 350º for 35 to 40 minutes.
