2 oz clarified butter
5 oz sliced beef tenderloin
2 oz heavy cream
1 oz chicken veloute
salt and pepper to taste

roasted new potatoes or mashed potatoes
steamed vegetables or broccoli

Pound sliced tenderloin till thin
Bread tenderloin twice (flour - egg - flour)
Heat clarified butter - saute until golden brown on both sides. remove from pan - place on plate.

Discard remaining grease in pan leaving bits of flour and meat to make gravy. pour heavy cream into same pan, heat, add veloute - whisk until smooth and reduce by 1/2. Add salt and pepper to taste.

Place meat at bottom of plate. Plate potatoes and veggies at top right and left. Finish steak with cream sauce - and enjoy!

For best results, put a little salt and pepper in the flour before dusting filet.

Veloute is simply butter, flour then chicken stock roux made into a paste to thicken sauce.
