4 potatoes (minimum) -cut into 1/4" wide slices
1 large onion sliced
1 green pepper sliced thin
1 28oz can of peeled whole tomatoes, cut into pieces with juice
3 stalks of celery cut into 1" wide pieces
4 oz of sliced fresh mushrooms
1# skinless boneless chicken breasts cut into small pieces
1# Italian sausage cut into 1 1/2" wide pieces
1 can 8oz tomato sauce
1/4 cup red wine
1 tsp each basil,oregano and parsley
1/4 tsp each of salt, pepper, garlic powder

Directions:
Fry sausage separately, remove excess grease and put in roasting pan. Put all other vegetables into pan, pour wine and tomato sauce over mixture and add spices. Stir to mix. Cover pan with aluminum foil and bake for approximately 1 1/2 hours or until potatoes are soft.
Add chicken 1/2 hour before stew is cooked. Stir stew every 20 minutes during cooking. When stew if finished add flour/water to thicken sauce in pan for a thicker stew. Serve with Italian bread/rolls.
