8 oz mostaccioli or medium tube pasta
1 whole egg
1 egg white
1 16 oz container low-fat cottage cheese
1 10oz package frozen chopped spinach
1 cup shredded mozzarella cheese
2/3 cup shredded Parmesan cheese
1/3 cup fresh parsley
1/4 tsp salt
1/4 tsp pepper
3 cups spaghetti sauce or more depending on taste
1/ -1# hamburger or Italian sausage

Brown meat until cooked through...breaking apart till no big chunks. Cook pasta according to directions, meanwhile in a large bowl combine the egg, egg white, cottage cheese, spinach, mozzarella cheese, 1/3 cup Parmesan cheese, parsley, salt and pepper; set aside. Drain pasta stir in 2 cups spaghetti sauce. Mix the remaining spaghetti sauce with the meat and mix all together. Put in sprayed baking pan. Cover and bake at 350º for 45-60minutes or until bubbly ...uncover, sprinkle with more mozzarella and the remaining 1/3 cup Parmesan cheese...bake until cheese is melted.

I normally use fresh bagged spinach...saute it in a little olive oil until tender...and I use more mozzarella cheese than the recipe calls for along with homemade spaghetti sauce.
