Cook pasta 24 hours in advance of serving it. Cook it 1 minute under the recommended cooking time. Remove from heat and strain. Run under COLD water for 30 seconds (till pasta is cold) Put cooked pasta in a plastic ziplock bag, and add approximately 1 tsp olive oil. Shake the bag, to mix the oil and pasta. Put only about a pound (dry) or so in each plastic bag. The oil will keep the pasta wet, it will also boil off when you reheat the pasta. Refrigerate until needed.
When ready to serve pasta, have a large pan of boiling water ready. Add precooked pasta to the water for 30 seconds. Use a strainer as you would in a deep fryer adding the cold pasta and then hold the strainer in the boiling water. This allows you to reuse the boiling water a couple of times, to heat all of your pasta. This technique works well, I learned this from the restaurant years ago and use it to serve Chili Johns or spaghetti dinners.
