1 1/4 cups flour
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
1 cup butter softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs
1 tsp vanilla
3 cups quick or old-fashioned oats
11 oz pkg (1 2/3 cup) butterscotch flavored chips

Preheat oven 375
Combine flour, baking soda,cinnamon and salt in bowl. Beat butter, granulated sugar, brown sugar, eggs and vanilla in large mixer bow. Gradually beat in flour mixture. Stir in oats and chips. Drop by rounded tablespoon onto ungreased baking sheet. Bake 7-8 minutes for chewy cookies; or 9-10 minutes for crisp cookies. Cool on baking sheets for at least 2 minutes before removing to cooling rack.

Can be used as a pan cookie...grease a 15 x 10 pan and spread prepared dough on pan. Bake for 18 - 22 minutes. Cool completely in pan before cutting.
