18 oz. (1 1/2 bags) white chocolate chips
5 oz. of pistachios, shelled and halved
3 oz. (approx. 1/2 - 2/3 c.) dried cranberries

Melt chocolate in a microwave safe bowl on medium high power for approximately 1 minute. Stir. If some chocolate remains unmelted, put back in microwave for 30 more seconds. Stir until all chocolate is melted and has a glossy texture. Add pistachios and cranberries. Mix to coat. Pour into greased 9 x 11 glass baking pan (lining the pan with buttered wax paper makes for easier removal). Chill at least 1 hour, until chocolate is firm. Break bark into large pieces with butter knife before serving.

This candy is a festive mix of red, green, and white. The sweet chocolate is balanced by the tart cranberries and slightly salty pistachios. This takes only a few minutes to make and is an excellent gift alternative to holiday cookies.
